Pickled Stuff

Ingredients:

  • Cucumbers
  • Red onion
  • Sweet peppers
  • Jalapenos 
  • Peppercorns
  • Red wine vinegar
  • White wine vinegar
  • White vinegar
  • Kosher salt (non-iodized)
  • Dried oregano
  • Chili flakes
  • Sugar

Instructions:

  • For Onions
  • Slice onions into moderately thin rings
  • Fill mason jar and add oregano and chili flakes
  • Add to a pot - 1 part water to 2 parts red wine vinegar
  • Add a big pinch of salt and a drizzle of honey
  • Bring to a boil
  • Pour over onions to fill jar and let sit over night in the fridge
  • For Pickles
  • Halve or quarter your cucumbers into pickle spears
  • Fill mason jar with cucumbers, a halved habanero, peppercorns, 4 cloves of smashed garlic, and 3 sprigs of dill
  • Boil 2 cups of water with a cup and a half of white vinegar, a big handful of salt, and a bit of sugar
  • Pour brine over pickles and let sit in fridge for a night in the fridge
  • For Peppers
  • Thinly slice 3 jalapeños and a bunch of sweet peppers to fill your mason jar
  • Add dried oregano 
  • Boil equal parts white wine vinegar with a big pinch of salt and a big drizzle of honey 
  • Pour over peppers and let sit overnight in the fridge
