Ingredients:
- Cucumbers
- Red onion
- Sweet peppers
- Jalapenos
- Peppercorns
- Red wine vinegar
- White wine vinegar
- White vinegar
- Kosher salt (non-iodized)
- Dried oregano
- Chili flakes
- Sugar
Instructions:
- For Onions
- Slice onions into moderately thin rings
- Fill mason jar and add oregano and chili flakes
- Add to a pot - 1 part water to 2 parts red wine vinegar
- Add a big pinch of salt and a drizzle of honey
- Bring to a boil
- Pour over onions to fill jar and let sit over night in the fridge
- For Pickles
- Halve or quarter your cucumbers into pickle spears
- Fill mason jar with cucumbers, a halved habanero, peppercorns, 4 cloves of smashed garlic, and 3 sprigs of dill
- Boil 2 cups of water with a cup and a half of white vinegar, a big handful of salt, and a bit of sugar
- Pour brine over pickles and let sit in fridge for a night in the fridge
- For Peppers
- Thinly slice 3 jalapeños and a bunch of sweet peppers to fill your mason jar
- Add dried oregano
- Boil equal parts white wine vinegar with a big pinch of salt and a big drizzle of honey
- Pour over peppers and let sit overnight in the fridge
